Another of the few 1955 cru classé estates, this vineyard and winery are on the site of the 11th-century chapel and 12th-century abbey of Celle-Roubaud. The abbey was completely renovated in 1994 by Bernard Teillaud under the direction of architect Jean-Michel Wilmotte. Today, Teillaud’s daughters, Aurélie Bertin and Delphine Meunier, are the owners. The wine, with a lovely pale peach tone, shows wild strawberry fruit with green grass and fresh rain nuances. Dry, the light-bodied palate is supported by lively acidity and a creamy, leesy texture, leading to a long finish. Elegant, refined and balanced, this wine will pair beautifully with an ethereal salmon soufflé. (Patricia Stefanowicz MW)
