Champagne Bonnaire was established in 1932 by the head of the family, Fernand, in the village of Cramant, right in the heart of the Côte des Blancs. Today, this family House is under the control of the fourth generation, Jean-Etienne and Jean-Emmanuel Bonnaire. Best known for its inimitable Blanc de Blancs Champagnes, the House is highly respected, and rightly so. This Champagne is a gem. Pale lemon-yellow in hue with small, persistent bubbles, the wine displays yellow plums, golden apples, Galia melon and toasty, brioche accents. Brut in style, the mid-weight palate has crunchy fruits supported by lively acidity and linen-textured mousse. Gentle autolysis comes through on the finish. An excellent match for oysters in Champagne-cream sauce or soft-shelled crabs. (Patricia Stefanowicz MW)
