Kit’s Coty is a megalith dolmen, or burial chamber, the site of a Neolithic (c. 4000BCE) chambered long barrow in Aylesford, Kent, and is now the site of Chapel Down’s very best vineyard. This Blanc de Blancs sparkling wine shows the superiority of the site. Pale lemon-green in colour with tiny bubbles and a narrow cordon, it displays intense autolysis, bready character, mixed red and yellow apples, ripe pineapples and a clementine note. Brut in style, the mid-weight palate shows bracing acidity and silky mousse texture framing the flavours. Accents of lemon zest and lime juice add interest. An intriguing fizz well-suited to gratin of fresh flounder or turbot. Or a perfect gift if visiting friends abroad. (Patricia Stefanowicz MW)
