Tasting notes:

A timeless Chardonnay, Eternidad is a solera blend of Chardonnays from four vintages. This is an expression that is ‘limitless’, that grows and develops more complexity over time. Barrel fermented and then aged in a true solera system where one third of the wine is bottled from the oldest tier and replaced with wine from the next oldest, etc, until the youngest tier is added from the ‘new’ vintage. Eternidad is quite deep yellow gold in colour, very buttery and rich, and packed with tropical fruits and creamy oak accented by a touch of caramel. Dry, slightly oxidative in style, the full-bodied palate is intense and harmonious with well-integrated spicy oak and good freshness of acidity to balance. Layered and textured with a lingering finish, this is a sensational expression of Chardonnay. A luxury offering, this wine will make a perfect pairing for lobster. (Patricia Stefanowicz MW)
