Another exciting icewine from Lakeview Wine Co. Like Vidal (above), Cabernet Franc is quite winter-hardy and ripens well in this cold northern climate, whilst keeping vibrant acidity. When the temperature drops below 10° C, the grapes are harvested frozen and pressed to extract just the juice, leaving the ice behind. The result is this wine, pale ruby with a watery brick coloured rim, and intense aromas and flavours of strawberry, raspberry, and rhubarb with hints of violets and sweet spices. Sweet, but not luscious, with a touch of forest honey and fresh-cut grass, the palate is light-bodied and nicely balanced with crisp acidity and a hint of tannin giving added structure. Well defined, this wine will pair with red fruit tarts, Eton Mess or dark chocolate. (Patricia Stefanowicz MW)
