Tasting notes:

Cono Sur’s icon wine, Silencio, is grown on mixed low-fertility soils,comprising alluvial, gravel, sand and clay, in high-altitude Maipo sites with lowrainfall and high diurnal swing, allowing the grapes to keep great acidity whileachieving phenolic ripeness. Deep ruby-purple-hued, the wine has black fruitand redcurrant, and tobacco oak, with hints of sweet red pepper, mint andthyme. Dry, the palate shows racy acidity and velvet tannins framing the flavours.Nicely defined, balanced and long, the wine is very attractive and would pair well with‘the ultimate burger’ of minced rump and sirloin with a little bone marrow blended in.(Patricia Stefanowicz MW)
