This Champagne, an English favourite, is delightful. Pale lemon-green inhue with persistent bubbles, the wine shows intense, fresh yeast overlayinggreen apple and spring blossoms. Brut-style and light-bodied, the palatehas bracing acidity and creamy mousse supporting the flavours.Beautifully integrated, sappy and with gastronomic tendencies, this wine isa superb accompaniment to Japanese tempura, or lightly-battered soft-shellcrab.
