This is the result of co-operation between Carol Duval-Leroy, president of the eponymous house, and head winemaker Sandrine Logette-Jardin. Reflecting their passion and generosity, their female personalities are beautifully expressed in this elegant and lovely wine. Pale lemoncoloured, it displays pure green fruits and griotte with undertones of fresh yeast and yellow roses. Brut-style, the delicate, lightbodied palate shows racy acidity and a brittle mousse texture. Intriguing notes of toffee and white chocolate enhance the mid-palate and lead to a savoury, lifted finish. This stunningly delicious wine needs no partner, but could match ethereal crab mousse.
