VIK is located in Millahue, Cachapoal Valley, where chief winemakerChristian Vallejo fashions this stunning wine from hand-harvested grapes,fermented with indigenous yeasts and then aged in new and used Frenchoak barrels. Named after the goddess of nature, love, beauty and art, La PiuBelle is an excellent name for this wine. Almost opaque purple-black, thewine exhibits intense black fruits, toasty oak and vanilla pod, with redpepper and crushed black peppercorns adding complexity. Full-bodied andrich, the flavours are framed by lip-smacking fresh acidity and linentannins. Concentrated, layered, textured and lingering, this is a completewine with a long future ahead. A perfect accompaniment to roastedwoodcock in a red wine sauce. (Patricia Stefanowicz MW)
