Proof that top-end Cava is a serious player in the world of fine sparklingwine, one of this year’s few Master medal winners was this outstanding fizzfrom Can Sala. Just over 10 years old, it is wonderfully evolved, while stillbright, lively, and very dry – this is a sugar-less cuvée. Among the notes ofcreamy coffee, burnt sugar and wood smoke – even peat – are characters ofcandied lemon, baked apple and hazelnuts. A refreshing, mature and fascinatingsparkling wine.
