Although Australia is not well-known for its varietal Merlots, winemakerextraordinaire Philip Shaw has achieved a remarkable wine from high-altitudevineyards. Deep ruby-purple in colour, the wine exhibits Victoria plum, dark cherryand blackcurrant fruit, overlaid with vanilla pod, exotic Indian spices and a touch ofleather. Sweet-fruited, the palate is mid-weight and well-defined, with brisk acidityand linen-textured tannins supporting the flavours. A long, peppery finish suggestsseared (or barbecued) sirloin steak with roast potatoes or Yorkshire pudding. (Patricia Stefanowicz MW)
