Eden Mill brings single malt whisky back to Fife

Scottish brewer and distiller Eden Mill has released its first single malt whiskies – a collection of seven different expressions packaged in 20cl bottles using different mashbills, processes, maturation techniques and wood-types.

Called the Hip Flask series, the new range has been matured in first fill and virgin oak ‘honey casks’ sourced from around the world. As the casks are smaller than those traditionally used in the maturation of whisky, Eden Mill has decided to release the expressions in smaller bottles.

The range includes Hip Flask No. 3, made using brown crystal malt which has been matured in US virgin oak and is described as having a “sweet, candied vanilla character”, and Hip Flask No. 6 made using pale spirit malt which has been matured in first fill Olorosso Sherry hogsheads and “leads with sweet icing sugar notes” together with “rum-soaked raisins, honeycomb and coffee”.

Paul Miller, co-founder of Eden Mill, said: “St Andrews has a rich history when it comes to whisky, and now over a century and a half later we’re picking it up where it left off.

“The Hip Flask Series is about applying the pioneering and experimental nature synonymous with Eden Mill to single malt whisky, showing the power of trying different grains, processes, maturation techniques and woods to highlight what you can do differently within the realm of single malt Scotch whisky.

“What people are tasting now is the start of a journey that will see the Eden Mill single malt evolve over 10, 20 and 30 years. The passion of our small team of distillers is evident in every drop of liquid we have released, and we can’t wait to share it with the world”.

The whiskies are available via the distillery’s online store, retailing for £25 per 20cl bottle.

This follows news that the new University of St Andrews campus in Guardbridge is to house Eden Mill’s new brewery and distillery after the Scottish drinks producer invested £4 million in the project.
