HK’s ‘demon chef’ in new venture

Alvin Leung, the brains behind the three Michelin star Bo Innovation to launch a new Korean street food restaurant, Bib n Hops in Wan Chai next month.

Bib n Hops is a play on words for the Korean dish, bibimbap and is the result of a joint venture between Leung and the Liberty Group.

Yong Soo Do, the former senior sous chef of Jinjuu and head chef of Sai Ying Pun hangout, U-Hang, is Bib n Hops’ new executive head chef who will execute the menu which focuses on Korean street food.

“Korean style eating is about rubbing shoulders with locals around stalls or under cozy pojangmacha tents while sipping soju,” said Leung.

“The streets of Seoul are lined with tented vendor carts selling a variety of dishes intended to be eaten on the go. Sampling these dishes is a great way to explore the culinary world of Korea. The launch of Bib n Hops will add a unique dining experience to trendy Ship Street, attracting the hip crowd of Hong Kong as well as tourists.”

Menu highlights include yukhoe – Korean steak tartare, Peruvian spiced pork belly bibimbap and Singaporean soft shell crab bibimbap  as well as a hearty mix of Korean beer and soju-based cocktails.

Alvin King Kong Leung is a British born, Canadian raised chef who holds three Michelin stars at his restaurant Bo Innovation in Hong Kong, one star at MIC Kitchen also in Hong Hong and has opened Bo Innovation in Shanghai. His Bo London restaurant closed in 2014.

He is nicknamed the ‘demon chef’, and has invented his daring form of molecular gastronomoy – X-Treme Chinese – famed for its ‘Sex on the beach’ dish of an edible condom made from konjac and kappa on a beach made of mushroom.

Bib n Hops is tipped to open in Ship Street, Wan Chai next month.
