Trullo chef to open new Covent Garden restaurant
The chef behind one of north London’s best-known Italian restaurants is set to open his first solo venture, Burro, in the West End next month.

Conor Gadd, chef co-owner of Trullo in Islington, will launch Burro in Covent Garden on Wednesday 11 March. The opening will be preceded by a three-day soft launch from Friday 6 to Sunday 8 March, during which lunch and dinner bookings will be offered at 50% off.
Burro, which translates as “butter” in Italian, is Gadd’s first solo project. The restaurant aims to reflect the produce-led cooking and hospitality that have defined Trullo for more than 16 years, drawing on what the chef describes as shared values between his native Ireland and Italy.
“Never in my wildest dreams did I imagine opening a restaurant in Covent Garden. But as soon as I saw the room – and the courtyard – I knew it was an opportunity I couldn’t miss. It’s been a labour of love with a brilliant team, and we can’t wait to welcome guests with some amazing food served in the warmest, most elegant of rooms,” Gadd said.
What’s on the menu?
Starters are set to include salumi and house-made focaccia, Venetian-style chicken livers on garlic toast, a house “Burro” caponata and cuttlefish stuffed with breadcrumbs and anchovies.

As at Trullo, pasta will form the centrepiece of the offering. Dishes include duck ragù made from Aylesbury duck and cooked for five hours with dried porcini, tortellini in brodo prepared in the style of Emilia-Romagna, and fettuccine alfredo made with egg-rich pasta, butter and 36-month-aged Parmigiano Reggiano.
Main courses will highlight produce from British farmers and fishermen, with options such as vitello al burro, Dover sole with prosecco and caviar, and a lobster acqua pazza using British lobster and shellfish sourced from day boats around the coast. Daily specials and larger sharing plates will also be available.
Desserts include tiramisu doughnuts and almond cake served with butter and sweet Marsala from western Sicily’s Curatolo Arini vineyard.
Perfect pours
The drinks programme has been developed by head wine buyer and sommelier William Amherst, featuring an all-Italian wine list with a particular focus on Piedmont and Tuscany. Producers include Montevertine, Quintarelli and Fontodi, alongside a small Champagne selection and a cocktail list built around classic serves such as negronis and martinis.
The interior has been designed by Lisa Helmanis of DAY Studio and is described as “part Irish country house kitchen, part 1950s Italian bistro”, with faded red and yellow walls, burgundy marble and white tablecloths.
Lighting has been created by Stileman Lighting, while a large canvas by artist Dan Ferguson depicts an Italian scene across one wall.
