Douglas Blyde went to Aulis to discover one of Charles Carron Brown’s signature non-alcoholic serves – ‘Red Wine Not Red Wine’, a fixture on the menu since September 2023. Built from Black Sun tea (Postcard Teas), unfermented red grape juice, beetroot, blackberries, blackcurrants, cocoa nibs, spent vines from Everflyht, black peppercorns, red wine vinegar and a blackcurrant wood infusion, it is cooked hard, strained and fined. Finished at counter with a few drops of the wood infusion, it’s served at room temperature alongside fallow deer deepened with fermented black garlic.
