Ukrainian bar talent to launch split-level cocktail venue in London

Founders Artem Skapenko and Alex Kostenyuk will bring method-led drinks, culinary influences and a 1200°C Loggerhead ritual to London in 2026. 

A new two-floor cocktail bar called FlipDog is set to open in London’s Old Street in March 2026. The concept, from Ukrainian industry figures Artem Skapenko and Alex Kostenyuk, puts technique at the centre of the drinking experience and blends design-led theatrics with what the founders call a “method-driven” approach to flavour.

Split-level format

FlipDog will feature two contrasting spaces. Street level will house a 20-seat room inspired by pop-up culture and designed to evolve over time through collaborations. A quieter 80-seat lower floor will focus on more composed service and technique-led drinks.

The interiors are being created by Kyiv-based design studio YOD Group, known for its precision-first architectural style.

Skapenko is an IBA World Champion and concept creator, while Kostenyuk is an international hospitality judge and consultant. Head bartender Igor Brovko, formerly of Tayēr + Elementary, will lead the bar team and joins with more than 10 years’ international hospitality experience.

Techniques and theatrical service

The drinks programme centres on process, with the most dramatic element being a reinvention of the colonial-era Loggerhead ritual. The method involves plunging a 1200°C heated iron poker into a cocktail to caramelise sugars, adjust texture and intensify flavour.

Alongside the drinks, FlipDog will serve seasonal shareable dishes ranging from small plates to larger options. The food draws from Asian and Eastern European influences and has been reworked through a modern lens.

Our vision is to craft a space that challenges conventions in the cocktail scene while remaining genuinely approachable,” said Skapenko and Kostenyuk. “Each drink is crafted with precision, highlights will be the Loggerhead method where a 1200°C iron poker theatrically caramelises sugars, enhances texture, and intensifies flavour. At FlipDog, creativity and care underpin every drink and dish, delivered without pretension. The bar is a meeting point of design, flavour, technique, and the cultural roots that inspire us.”

FlipDog is due to open in March 2026.
