Carbone team to launch restaurant at Cambridge House hotel

On the drinks list, you’ll find 10 variations of the classic martini, and the wine list will feature first growth Bordeaux, grand cru Burgundy and rare cult vintages.

The US-based restaurant firm behind recently launched London restaurant Carbone has announced plans to launch a second site in London, in collaboration with upcoming Mayfair hotel, Cambridge House.

Set to open in 2026, Major’s Grill will be the flagship dining offering at the Aubergine Collection’s hotel and members club at 94 Piccadilly, with a menu spotlighting English grill classics, like seafood and steak.

The restaurant, set within an elaborate dining room inside the Georgian mansion, is a new concept for Major Food Group, which includes Dirty French, Chateau ZZ’s, Sadelle’s, Contessa and Parm in its portfolio.

On the drinks list, diners can expect 10 riffs on a martini, with a wine list featuring first growth Bordeaux, grand cru Burgundy and rare cult vintages.

Storied history

Jamie Reuben, principal at Reuben Brothers said: “This bold and original concept is exactly what we always envisioned for Cambridge House. 

“Together with Major Food Group and Auberge Collection, we’re creating a destination inspired by The Grill, the iconic New York institution – bringing new energy to one of London’s most historic addresses and reimagining its future.”

Built in 1766, Cambridge House is a Grade 1 listed Palladian-style townhouse that was the former base of the Naval and Military Club for more than a century. Now, Jean-Louis Denoit is the man behind the hotel’s interiors.

Founded in New York by Jeff Zalaznick, Mario Carbone and Rich Torrisi, Major Food Group has built a global empire over the past decade comprising more than 50 restaurants, bars and private clubs.
