HK Ritz-Carlton unveils ‘highest’ private dining room

Perhaps the highest private dining room in the world, the new Chef’s Table at the Hong Kong Ritz-Carlton is perched on the 102nd floor where diners can watch executive chef Peter Find whip up multi-course feasts.

Starting from this month, the first country in the spotlight is Peter Find’s home of Germany where the Bersrod-born chef will create a hearty regional six-course menu including brown shrimp salad with herbs and Pumpernickel, the fun-sounding homage to meatballs – Koenigsberger, klops and capers – and German Schwabentopf (boneless pork loin) and cherry.

The open-style experience will have Find personally attending the table and guiding guests through each course.

“The idea of a Chef’s Table is to present guests with an insider’s pass into the world of cooking,” he said. “Guests will be able to see and experience the work and secrets that go into crafting the dishes we serve and through the dishes that we have prepared, we hope to share with the guests our passion for and the refinement of the culinary arts.”

The dining room seats up to eight, with a minimum spend of HK$16,000 (or HK$2,000 per person) with the Ritz-Carlton somm Benson Yan, on hand to suggest wine pairings.

The Hong Kong Ritz-Carlton also boasts the world’s highest bar, Ozone on the 118th floor where drinkers can peer down on the top of Hong Kong’s skyscrapers.
