Solo tapas venture from Brindisa founder

José Pizarro, co-founder of Tapas Brindisa, is due to launch his first solo venture in south east London this April.

Called José, this latest addition to the capital’s thriving tapas scene takes inspiration from Barcelona’s Boqueria, with its informal feel, limited seating and fresh ingredients.

A daily menu based on talks with suppliers the previous evening will focus on traditional, simple tapas dishes, such as razor clams and tortilla. Pizarro also intends to make Sherry a speciality feature of his wine list.
 
The tapas bar will be located on the rapidly-emerging foodie colony of Bermondsey Street, marking the first step in a busy year for the chef. In late summer or early autumn he plans to open a more formal restaurant called Pizarro in the same area.
