10 Greek Street founders launch beer brand

Luke Wilson and Cameron Emirali, founders of popular Soho bistro 10 Greek Street, have branched out into beer with the launch of the Braybrooke Beer Co.

Joining them on the Leicestershire-based project is Nick Trower, the former general manager of Dock Kitchen who founded Biercraft in 2013, which supplies London restaurants, bars and indies with craft beers from around the world.

Completing the Braybrooke Beer Co quartet is brewer Stephan Michel, of the family-run Mahr’s Bräu in Bamberg, a passionate German lager advocate.

The project came about two years ago when Wilson, Emirali and Trower spotted a gap in the market for a British brewed version of a versatile, thirst-quenching German keller lager after paying a visit to Michel at Mahr’s Bräu.

The team built a brewery in a former grain drying store on a farm in Market Harborough, Leicestershire.

Their first release is Braybrooke Keller Lager, an unfiltered and unpasteurised amber lager brewed using German malt and hops, and a Franconian recipe.

The beer is cold stored and matured for four-and-a-half weeks before release.

According to its makers, the result is, “a refreshingly crisp lager with enough body and complexity to be a great accompaniment to whatever you are eating”.

Head brewer, Mario Canestrelli, comes by way of Orbit Beers in South London.

In launching the project, Wilson and Emirali were keen to create a beer that paired well with the type of food served at 10 Greek Street.

“The interest in pairing beer with food is really growing. Our customers are curious; they want to try new things.

“It was really important to us that the beer we made was going to suit our food – it has to be elegant and approachable,” Wilson said.

Braybrooke Keller Lager is on pour at 10 Greek Street and available to buy through Biercraft.
