Atherton launches Pollen franchise in Singapore

Jason Atherton has announced that he will be opening a Pollen restaurant at Garden by the Bay in Singapore.

The new restaurant will be the only one inside the Flower Dome and will serve Mediterranean inspired cuisine.

The restaurant is not, however, Atherton’s first venture into the east having previously launched his tapas bar Esquina in Singapore’s Chinatown and Table No. 1 in Shanghai.

The new venue will have 120 covers over two floors and guests will dine among olive trees and the restaurant’s own internal herb and vegetable gardens.

Atherton said: “Pollen is inspired by the notion of a seed dispersing from Pollen Street Social in London which then travels round the world before pollinating into a flower on this tropical island in Asia.

“I’m very excited to unveil this exquisite flower as my Singapore outpost at the Flower Dome where there will be a gourmet showcase of my culinary creations.”

The menu at Pollen will mirror that of Atherton’s flagship restaurant and includes dishes such as crispy baby squid with piperade purée and roasted lime herb roasted pork belly, served with broad beans, slow cooked squid, chorizo and wild rocket.

The head chef of the new restaurant will be Colin Clague, who has previously worked at the Burj Al Arab and the Dubai and London branches of Zuma. The pastry chef is Andres Lara – who will continue Pollen Street Social’s reputation for excellent puddings and the head sommelier will be Laure Patry.

Pollen opens today, 29 June 2012.
