Tasting notes:
PHI is the 21st letter of the Ancient Greek alphabet and symbolises balance, harmony and proportion. The Freeman’s Bridge vineyard in Heathcote is the origin for this wine, made by Kate and Steve Webber using amphorae for fermentation and ageing, which gives added dimension to the purity of the Grenache and Shiraz grapes. Medium cherry-coloured with a vieux rose rim, the wine exudes wild cherry fruit and strawberry with crushed rose petal and rhododendron overtones. Vibrant on the palate, juicy and slightly meaty with crisp acidity and velvet- textured tannins, this wine is an excellent choice for Ben De Bortoli’s osso buco with gremolata.
