Founded in 1647, Bodegas Chivite is one of the very old family dynasties in Spain. This superb wine from their homeland exhibits a very pale vieux-rose colour and light cherry fruit with crushed red rose petals. Dry, elegant and showing lovely creamy texture and integrated bracing acidity, the palate flavours are well-defined. Pink grapefruit, macadamia nut and cream give interest. A lingering and fabulous example of rosado, this would be my choice for poached whole salmon with a dill-cucumber-sauce. (Patricia Stefanowicz MW)
