The top expression from Drappier is a powerful Champagne that would pair well with food, from fish to white meats, and cheeses. This version, from the 2012 vintage, is fully mature, with evolved characters of dried fruit, beeswax, caramel and a charred bread. The finish is bone dry, with chalky phenolics, and an oxidative note of bruised apple, in keeping with the very low SO2 levels employed by the maison. (Patrick Schmitt MW)
