As custodians of the Hadspen Estate in Somerset, we are presently engaged in a wide-ranging redevelopment of the property to restore the historic buildings and landscape of the Estate. The walled gardens associated with Hadspen House will be reopened to the public in 2019 as the central feature of a significant new
visitor attraction including cider making, orchards, garden museum, farm shop, café and estate walks. Hadspen House and the historic farm buildings surrounding it will simultaneously open as part of a new luxury hotel and spa experience. It is anticipated that the Estate will attract some 100,000 visitors per year and in time become one of the region’s most popular destinations.



Cider making is synonymous with our rural Somerset setting and in all its diverse facets – orchards, apple growing, milling, pressing and the drink itself – will feature centrally as part of the visitor experience. We are presently building a bespoke cider production facility right at the heart of our public garden, where we intend to showcase to the public the craft and traditions of cider making. Our fermentation facility is designed to suit small batch production so as to exploit the 70 or so different Somerset cider apple varieties planted in our orchards. Using controlled atmosphere apple storage, we will extend cider apple availability throughout the year so that visitors can always see cider being made, whatever the season. The facility is planned to be ready for operation in 2018.

The facility is planned on a benchmark of 100,000L annual production including juice, cider and bottle fermented cider.

We are looking for an individual with in-depth and proven technical prowess in the field of cider making to create an excellent product range and to manage production to the highest standards. It’s a rare chance to shape and bring a completely new product to the market.


As well as production, the Cider Master will have overall responsibility for the development of the business in all its various aspects: purchasing materials, the production facility and team, the brand and packaging, marketing and sales, financial management etc.


The Cider Master will be charged with building a small but strong team of people with all of the necessary skills to succeed in both production and sales.

Most importantly we are looking for someone with a real love of cider and the enthusiasm, personality and eloquence to be able to share that passion with our guests during tours, tastings and events. The role is very much that of a public facing ambassador of the product and of the Estate.




Cider Making

  • Setting up, testing and commissioning the new build cider production installation at Emily Estate including apple storage, apple delivery and washing system, milling and pressing equipment, fermentation vessels and control systems, bottling line, pasteurisation, disgorging line etc.
  • Designing and developing the recipe and product range from scratch to include both juice and cider products.
  • Sourcing raw materials and overseeing their handling and storage.
  • Planning, scheduling and managing the production processes for each product.
  • Expert management of fermentation and blending process to create high quality products in line with the intended product range.
  • Oversee the production of finished, packaged goods, their storage and dispatch to vendors.
  • Maintaining production standards, consistency and quality control across all products.
  • To be fully aware and conversant with all aspects of Health and Safety and the promotion of working methods that protect the team and visitors.
  • Ensure that all legislation is met and training records are maintained to demonstrate achievements and due diligence.


The Cider Business

  • Person primarily responsible for the successful establishment, operation and ongoing development of the cider production business and brand.

  • Preparing an annual budget and business plan for the business including resourcing, production, maintenance, packaging, marketing, brand and product
    development, sales etc.
  • Establishing output/sales targets and growing the business year on year.
  • Being the brand ambassador for the business both within the context of the visitor attraction as well as interacting with the cider industry and the marketplace.
  • Assisting with publicity of the wider visitor attraction at Emily Estate.


The Cider Team

  • Recruiting, training a suitably sized and skilled team of people to operate the cider business including production assistants, sales people, labour as well as seasonal workers.

  • Planning and overseeing the work of the Cider Team on an ongoing basis.
  • Conducting annual performance reviews with members of the Cider Team to promote career development.
  • Engaging with industry specialists, suppliers, marketing and designers to develop a high quality and successful product.
  • Interaction with the Cellar Managers elsewhere.



The Cider Master will report directly to the General Manager, with whom he or she will present and agree business plans and budget on an annual basis. Throughout
the year, he or she will present a weekly report or update, outlining progress with planned development and production output targets as well as reviewing monthly
financial accounts relating to the cider business. The Cider Master will meet on a weekly basis with the wider Estate management team for coordination.


The Cider Master will principally be responsible for managing the work of the Cider Team both on a long term as well as on a day to day basis. This will comprise a small team of people involved with production, maintenance, marketing and sales of the cider product. The Cider Master will be responsible for engaging and working with consultants, specialists and contractors required for the successful operation of the cider business.


The Cider Master will have a normal working base in the Cider House itself to closely monitor and oversee the production process, but will also have the support of the general admin team based in the main Estate Office nearby. 



  • Passionate, knowledgeable and talented in the domain of cider making.
  • A desire to create award winning products and to present a high-quality showcase of cider making to the public.
  • First hand experience of operating a successful commercial cider making enterprise of medium scale.
  • Proven technical expertise in cider making, fermentation, blending and finishing processes.
  • Strong and effective management of a small team.
  • Confidence and personality to interact with members of the public and hotel guests on a day to day basis as well as representing Emily Estate at public
  • A commitment and eagerness to provide the highest level of visitor experience.
  • Commercial awareness and business planning and management skills.
  • IT skills for implementing and maintaining efficient management systems and records are an essential requisite.
  • Ability to travel within the UK and overseas including full and UK driving license.
