Gosset creates new cuvée with Marcus Wareing

The oldest house in Champagne, Gosset, has teamed up with Michelin-starred British chef Marcus Wareing on a bespoke blend for his restaurants.

Gosset Le Cercle NV, Marcus Wareing Special Edition will be listed exclusively at Marcus at The Berkeley in Mayfair, The Gilbert Scott in King’s Cross and Tredwells in Covent Garden.

The bespoke cuvée has been bottled in magnum as well as 75cl

The brut cuvée, personally overseen by Wareing, comes from a base of Gosset Grande Réserve 2014 but has been tweaked to make it even more food friendly.

“I saw the potential of Champagne with food a few years ago when we helped to launch a new vintage of Gosset at Tredwells.

“I could see that Gosset was not just about bubbles, but about the complexity of its wines and their compatibility with great food.

“Working with Gosset to create my own special cuvée was an amazing experience. We’re sure that it’s going to be a terrific success,” longtime Gosset fan Wareing said.

Cellar master, Odilon de Varine, Marcus and restaurant manager, Michael Deschamps, experimented with a number of blends before deciding on the final wine.

Wareing visited the house in July to put his finishing touches to the blend, which has a dosage of 7.5g/l for the bottle and 6g/l for the magnum, and focuses on freshness.

“The wine opens with a crisp clean nose and subtle notes of apples and pears. It lingers across the palate with a nutty, pithy effervescent finish, which is beautifully balanced with a touch of salinity,” said Deschamps.

Odilon de Varine added: “It was a great experience to work with Marcus on the creation of this special cuvée.

“He is so in tune with his palate, to have the chance to create a cuvée with him was an honour and we’re both very pleased with the result”.
