Domaine Dillon restaurant awarded two Michelin stars

‘Le Clarence’, the restaurant located at Domaine Clarence Dillon’s Paris ‘embassy’, has been awarded two Michelin stars just a year after it opened.

The restaurant is located at Hôtel Dillon a 19th century townhouse on Avenue Franklin Roosevelt owned by the proprietors of Bordeaux first growth Château Haut-Brion.

Opened in late 2015 as part of Domaine Clarence Dillon’s 80th anniversary celebrations, the mansion also incorporates a shop that sells wines from across the company portfolio: Haut-Brion, La Mission Haut-Brion and Quintus, as well as other fine wines from across France.

Announced today (9 February), the award is the second time Le Clarence’s executive chef and managing director, Christophe Pelé, has been at the helm of a two-star restaurant, having previously run La Bigarrade when it was awarded two stars in 2010.

He said: “This distinction honours the enthusiasm, work and ambition of our entire team. I would like to share this great success with all of my co-workers, and highlight our ‘chef de cuisine’ Giuliano Sperandio, and, of course, my colleague, Antoine Pétrus, head sommelier and restaurant manager.”

Prince Robert of Luxembourg, chairman of Domaine Clarence Dillon, added: “The Dillon family is very happy and proud with this exceptional Michelin Guide distinction which means that our customers and the Michelin inspectors gained just as much pleasure dining as we enjoyed creating and bringing to life this novel establishment.

“Le Clarence is an illustration of everything that I love about France: the ‘art de vivre’, the passion for gastronomy, and of course, a deep respect for the ancient culture of wine.”
