Hong Kong innovation hits London

One of Hong Kong’s most charismatic chefs is bringing his “X-treme Chinese cuisine” to London this September.

Alvin Leung, whose Bo Innovation restaurant holds two Michelin stars and was ranked at 52 in the San Pellegrino World’s Best Restaurants 2012, has chosen Mayfair as the location for his first restaurant venture outside Hong Kong.

Born in London, the self-taught chef originally trained as an acoustic engineer before making a name for his modern, molecular take on Chinese cuisine, which adds a cleaner, lighter twist to centuries-old recipes.

Leung’s Bo London will feature a number of signature dishes from his Hong Kong restaurant, together with new dishes inspired by its British location.

Setting out his ambitions for this London venture, Leung said: “I like to challenge people’s expectations, to surprise and excite them. My aim is to have people say ‘That was the best meal I’ve ever had’…and I just work backwards from that”.
